Arepas
4 cups Promasa yellow corn flour
1/2 cup flour
2 tsps salt
2 tbsps butter or margarine
2 tbsps shortening (Cookeen, Crisco)
2 tsps baking powder
1/2 lb minced beef, pork or chicken
1/2 tsp salt
1/2 tsp Matouk's Calypso Sauce (or to taste)
6 tbsps Chief Green Seasoning
1 tbsp Chatak Shadon Beni Chutney
What tuh do?
1. Season meat to taste (preferably leave overnight in fridge) and brown in
saucepan
2. Sift the Promasa, flour, salt and baking powder together
3. Add butter and shortening together by hand until mixture becomes grainy.
4. Add sufficient water to make a soft dough
5. Knead lightly and then cut into small balls, so that when rolled flat, will
make a circle 8" in diameter
6. Place about 1 - 1½
tbsps of meat mixture into one half of the 8" circle
7. Dampen
edge and fold over the other 1/2 of the circle to form a crescent.

Squeeze edges together
9. Fry in hot oil until golden brown
